The Pasilla Pepper is dark green in color ranging anywhere from 5" to 9" long and about 1" to 1 1/2" wide. It has a rich, sweet flavor with a medium to intense heat.

    Fresh Pasillas are used in a variety of traditional Latin dishes including mole sauce. They can be roasted, skinned and shredded. Roasting gives the Pasilla a smoky, earthy flavor and is a favorite for chile relleños. For an interesting flavor, add it fresh to the standard enchilada sauce.
