Gypsy Peppers are just like bell peppers, but sweeter and very colorful. They turn from shades of green-orange to shades of vibrant red and have a wide seed cavity with a tapered end and are about 4-6 inches in length.

Culinarily speaking, use this pepper like you would any other sweet pepper. The thin walls make them great for frying, and the wide cavity begs to be stuffed. You can also just simply eat these raw with your favorite hummus.
